Apple jam Swiss roll sliced and served

Ingredients

  • 5 eggs
  • 150 g (3/4 cup) sugar
  • Pinch of salt
  • 140 g (1 cup) flour
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 60 ml (1/4 cup) simple syrup
  • 450 g (1 lb) apple jam

Instructions

  1. Whisk the eggs, sugar, and salt until pale and fluffy, then gently fold in the flour, baking powder, and vanilla.
  2. Spread the batter on a lined tray and bake at 180°C (355°F) for about 15 minutes, until springy.
  3. Roll the hot sponge up in a damp kitchen towel and let it cool in the roll.
  4. Unroll, brush with simple syrup, and spread the apple jam evenly.
  5. Roll it back up, wrap tightly, and chill for at least 2 hours before slicing.

Tips

  • Roll the sponge while it’s still hot — a cooled sponge cracks instead of rolling.
  • Don’t overbake: the sponge should spring back when touched and stay pale.
