Ingredients
- 240 g (~2) peeled apples, cored
- 50 g (3 tbsp) water
- 110 g (1 1/4 cups) oat flakes ground into flour
- 50 g (1/3 cup) almonds
- 20 g (1.5 tbsp) vegetable oil
- Raisins, for topping
- Cinnamon, optional
Instructions
- Chop the peeled apples, add the water, and blend with an immersion blender into a puree.
- Grind the almonds into crumbs and stir into the puree.
- Add the oat flour and oil; mix and rest 7 minutes.
- Spoon cookies about 5-7 mm thick onto oiled parchment using two spoons; top with raisins.
- Bake at 200C (400F) for 20 minutes.
Tips
- Let the dough rest the full 7 minutes so the oat flour absorbs the moisture and the cookies hold together.
- Keep the cookies thin and evenly spaced so they bake through and crisp at the edges.
