Ingredients
- 1 ripe avocado
- 1/2 red onion, finely diced
- 1 tomato, finely diced
- 1 tbsp lemon juice
- 2 tbsp olive oil, plus more for drizzling
- Salt and black pepper to taste
- 2-4 tbsp cream cheese
- 4-6 slices lightly salted fish (trout or salmon)
- A handful of arugula
- A few fresh basil leaves
- 2 slices bread (brioche works beautifully)
Instructions
- Mash the avocado with salt, pepper, lemon juice and olive oil, using a fork. If the avocado is firm, pulse it briefly in a blender first.
- Fold in the diced red onion and tomato.
- Toast the bread slices in a dry pan and spread with cream cheese.
- Pile on the avocado mixture, then top with the smoked fish, arugula and basil leaves. Drizzle with a little olive oil and serve.
Tips
- Use ripe-but-firm avocados: they mash smoothly without turning to mush.
- Toast the bread until deeply golden — the crunch contrasts beautifully with the creamy toppings.
- A final drizzle of good olive oil and a pinch of flaky salt makes all the difference. For brunch inspiration, see seriouseats.com, or go sweet next time with our Honey French Toast Buns with Goat Cheese.
