Chocolate crepes rolled with coconut cream filling, drizzled with chocolate sauce and sprinkled with coconut flakes

Ingredients

For the coconut filling:

  • 300 g milk
  • 1 egg
  • 2 tbsp sugar
  • 30 g coconut flakes
  • 30 g cornstarch
  • 2 tbsp cream cheese

For the chocolate crepes:

  • 2 eggs
  • 2 tbsp sugar
  • Pinch of salt
  • 300 g milk
  • 15 g cocoa powder
  • 120 g flour
  • 1 tbsp vegetable oil

Instructions

  1. For the filling: combine all filling ingredients except the cream cheese.
  2. Cook over medium heat, stirring constantly, until thick.
  3. Cool completely, then stir in the cream cheese.
  4. For the crepes: whisk the batter smooth and fry thin chocolate crepes.
  5. Spread each crepe with coconut filling and roll up.

Tips

  • Let the batter rest for 10 minutes before frying for the thinnest, most flexible crepes.
  • Make sure the coconut filling is completely cool before spreading, or it will melt the crepes.
  • Chill the rolled crepes for 20 minutes before slicing so they hold their shape — for more dessert inspiration, visit Allrecipes.
