This cherry clafoutis is the easiest French dessert you will ever bake: sweet cherries suspended in a silky, custard-like batter that puffs up golden in the oven. Ingredients
- 350 g (12 oz) cherries and sweet cherries, pitted
- 3 eggs
- 280 ml (1 cup + 2 tbsp) coconut milk or heavy cream
- 70 g (1/2 cup + 1 tbsp) flour
- 50 g (1/4 cup) sugar
- Vanillin to taste
- Pinch of salt
- Butter for the pan
- Almond flakes or coconut chips for topping
Instructions
- Grease a baking dish well and spread the berries in it.
- Whisk the eggs with the sugar and vanilla.
- Add the coconut milk or cream, then sift in the flour and salt; whisk smooth.
- Pour the batter over the berries and decorate the top as you like.
- Bake in a preheated 190C (375F) oven for 35 minutes until set and golden.
- Cool slightly and serve warm.
Tips
- Pit the cherries over a bowl to catch every drop of juice, then stir the juice into the batter for extra flavor.
- Do not overbake: the center should be just set with a slight jiggle — it firms up as it cools.
