These chicken and mozzarella tortilla triangles are the kind of easy, high-protein snack that disappears minutes after hitting the table. Seasoned ground chicken and gooey mozzarella get folded into crisp tortilla triangles, then baked until golden — much like our reader-favorite homemade chicken cutlets, they are weeknight-friendly and endlessly customizable. Serve them with Greek yogurt or salsa, alongside these crispy lavash pies with chicken and cheese for a crowd-pleasing spread.

Ingredients
Makes 6:
- 3 tortillas (65 g / 2.3 oz each)
- 300 g (10.5 oz) ground chicken (from pure fillet)
- 90 g (3.2 oz) mozzarella
- 6 g (1 tsp) oil for frying
- 45 g (3 tbsp) Greek yogurt
- Salt and spices to taste
Instructions
- Brown the ground chicken in oil with salt and spices (chicken seasoning, pepper, garlic, oregano) until done.
- Dampen each tortilla on both sides with water and cut in half. Fill with the chicken and most of the cheese.
- Fold into triangles.
- Brush with Greek yogurt, sprinkle with the remaining cheese, and bake or pan-toast until golden and crisp.
Tips
- Dampen the tortillas on both sides before folding so they roll without cracking.
- Brush with Greek yogurt and sprinkle with cheese before baking for an extra-golden, crisp finish. For more tortilla-based inspiration, Allrecipes has plenty of ideas.
- Serve hot with salsa, guacamole, or a Greek yogurt dip — and do not skimp on the resting minute so the cheese sets.
