Ingredients
- Makes 3 portions:
- 150 g (5 oz) dry orzo pasta
- 300 g (10 oz) chicken fillet
- 180 g (about 1 1/4 cups) cherry tomatoes
- 120 g (about 3/4 cup) canned beans
- 90 g (about 1/3 cup) pesto sauce
- 100 g (about 1/2 cup) Greek yogurt
- A handful of arugula
Instructions
- Sear the chicken fillet (with Maggi seasoning leaves if you like, or simply with spices).
- Boil the orzo until tender.
- Combine everything, dress with yogurt and pesto, and divide among containers. Keeps well for 3 days.
Tips
- Let the chicken rest for a few minutes before slicing so it stays juicy in the bowls.
- Keep the arugula on top of each container until serving so it stays fresh and crisp.
