- 100 g (3.5 oz) carrots
- 150 g (5 oz) onion
- 500 g (1.1 lb) potatoes
- 50 g (3.5 tbsp) butter
- 100 g (3/4 cup) wheat flour
- 100 g (3.5 oz) hard cheese
- 1 egg
- Vegetable oil, for frying
- 70 g (2.5 oz) vermicelli
Instructions
- Cover the chicken with water and simmer for 40 minutes, skimming the foam.
- Dice the carrot, onion, and potatoes; saute the onion and carrot in oil until golden.
- For the dumplings: mix softened butter with grated cheese, the egg, and flour into a dough; roll small balls.
- Add potatoes and vermicelli to the broth and cook 10 minutes; add the dumplings and cook 5 more minutes.
- Season with salt and pepper; serve hot.
Tips
- Keep the dumplings small — they swell as they cook.
- Skim the foam while simmering for a clear, golden broth; Serious Eats has a great primer on better chicken stock.
