Ingredients
- 1 egg
- 1 banana
- 2 tsp cocoa powder
- 1/3 tsp baking soda or baking powder
- Sweetener to taste (optional)
- For the glaze: sugar-free chocolate + 30 ml (2 tbsp) milk
Instructions
- Mash the banana with a fork. Beat in the egg, cocoa and soda (quench the soda with vinegar if using) or baking powder; mix well.
- Transfer to a mold and microwave 3-4 minutes (depends on wattage), or bake 20-25 minutes at 175°C (350°F).
- Melt the chocolate, stir in the warm milk until smooth and pour over the cake.
Tips
- Use a very ripe banana for the sweetest flavor and softest texture; a firmer banana will make a drier cake.
- Check the cake at 3 minutes in the microwave, since wattages vary, and stop as soon as the center is just set.
