Nothing beats a plate of classic spaghetti bolognese: silky pasta, a rich tomato-meat sauce, and a generous shower of cheese. This easy weeknight version comes together in one pan while the pasta boils, so dinner feels comforting without a long evening in the kitchen. Ingredients
- Spaghetti
- Ground meat
- 1 onion, finely chopped
- 1 carrot, finely grated
- 3 tbsp tomato paste
- 200 ml (3/4 cup + 1 tbsp) water
- Olive oil
- Salt and pepper
- Grated cheese, to serve
Instructions
- Finely chop the onion and grate the carrot.
- Saute in a drop of oil until golden.
- Add the meat and brown, breaking it up, about 5 minutes.
- Season, stir in the tomato paste, pour in the water, reduce to minimum, cover, and wait 10 minutes.
- Meanwhile boil the pasta per package directions.
- Serve: nest the spaghetti on plates, top with bolognese, and shower with cheese.
Tips
- Save a splash of pasta water to loosen the sauce and help it cling to the spaghetti.
- Let the sauce rest covered for a few minutes before serving — it thickens and tastes even richer.
