This cottage cheese and berry bake is soft, creamy, and bursting with juicy berries — a light dessert that tastes like a treat yet is packed with protein. The semolina gives it a delicate, tender crumb, and the berries turn jammy as they bake. Ingredients
- 500 g cottage cheese (5%)
- 2 eggs
- 80 g sour cream
- 25 g semolina
- Sweetener to taste
- 300 g berries
- 10 g cornstarch
Instructions
- Combine all ingredients (blend if the cottage cheese is grainy). Spread the cheese mixture in an 18 cm pan and top with the berry mixture.
- Bake at 180°C (350°F) for 35–40 minutes.
- When done, leave the bake to cool in the closed oven for 30 minutes without opening the door.
- Best made the evening before: either leave in the oven overnight, or cool at room temperature, chill 2 hours, and only then unmold.
Tips
- Blend the cottage cheese until completely smooth for the silkiest texture.
- Toss the berries with the cornstarch before topping so the juices thicken instead of running — the USDA lists cottage cheese as a good source of protein and calcium.
- For another berry dessert, try our Cottage Cheese and Berry Gelatin Dessert — it is light, refreshing, and needs no baking.
