Ingredients
- 300 g (1 1/4 cups) cottage cheese
- 2 eggs (1 whole + 1 white for dough, 1 yolk for brushing)
- 300 g (10 oz) chicken breast, diced
- 50 g (1/2 cup) grated cheese
- 4 tbsp whole-grain flour
- Salt and pepper to taste
Instructions
- Mix the cottage cheese, whole egg, egg white, flour, salt, and pepper into a smooth dough.
- Form balls, place on a baking sheet, and press a hollow into the center of each. Bake at 180°C (350°F) for 10-15 minutes.
- Meanwhile, dice and sauté the chicken with salt, pepper, and spices until done. Grate the cheese.
- Brush the buns with yolk, top with chicken, and sprinkle with cheese. Bake 20 more minutes.
Tips
- Use dry cottage cheese for a dough that holds its shape; drain wet cottage cheese well first.
- Press a generous hollow into each bun so the chicken topping sits neatly in the center.
- Serve warm while the cheese is melted, or reheat briefly for a freshly baked taste.
