Creamy baked salmon over rice with spinach and melted cheese

Ingredients

  • 400 g (14 oz) salmon fillet
  • 300 g (10.5 oz) fresh spinach
  • 100 g (1/2 cup) rice
  • 100 g (3.5 oz) cheese, grated
  • 190 ml (3/4 cup) heavy cream (30% fat)
  • 10 g (2 tsp) butter
  • 3 garlic cloves
  • 20 g (1 tbsp) Worcestershire sauce

Instructions

  1. Rinse the rice 5-7 times, cover with water in a pot, seal with a tight lid and cook over high heat for 6 minutes. Reduce to low heat, stir, cover again and cook 4 more minutes. Drain or rinse if you like.
  2. Melt the butter in a skillet, saute the garlic for 2 minutes, add the spinach and cook a couple of minutes until wilted. Pour in the cream and stir in 50 g of the cheese.
  3. Cut the salmon into small cubes and toss with the Worcestershire sauce.
  4. Spread the rice in a baking dish, layer on the spinach-cheese sauce and the salmon, sprinkle with the remaining cheese and bake at 180°C (350°F) for 15-20 minutes.

Tips

  • Rinsing the rice well keeps the cushion light and fluffy rather than sticky.
  • Do not overbake the salmon — it should stay moist and just flake apart.
  • Let the bake rest for 5 minutes before serving so the creamy sauce settles.
