Ingredients
- 1 chicken breast (~200 g)
- 250 g pasta
- 1 cup cherry tomatoes, halved
- A handful of spinach
- 1 garlic clove, minced
- 2 tbsp cream cheese
- 4 tbsp tomato paste
- Salt, Italian seasoning, and olive oil
Instructions
- Season the chicken breast with salt and Italian seasoning; roast at 180°C (350°F) for 25 minutes.
- Sauté the minced garlic and cherry tomatoes in olive oil until soft.
- Stir in the tomato paste, cream cheese, and spinach until a smooth sauce forms.
- Toss with al-dente pasta and top with the sliced roasted chicken.
Tips
- Let the roasted chicken rest a few minutes before slicing so the juices stay in.
- Stir the cream cheese in over low heat so it melts silky-smooth — never boil the sauce. The test kitchen at allrecipes.com has more cream-sauce tips.
- Save a splash of pasta water; it loosens the sauce and helps it cling to every bite.
