This easy strawberry jam pie is sweet, simple, and wonderfully summery. A soft, tender sponge cake holds ribbons of strawberry jam, and a dusting of powdered sugar makes it look as good as it tastes. It comes together with just a few pantry ingredients, perfect for brunch, dessert, or an afternoon treat with tea.

Ingredients
- 190 g (1 1/2 cups) flour
- 1 egg
- 50 g (1/4 cup) sugar
- 150 ml (2/3 cup) milk
- 50 ml (3 tbsp) vegetable oil
- 8 g (2 tsp) baking powder
- 150 g (about 1/2 cup) jam (strawberry works great)
Instructions
- Whisk the egg, sugar, oil, flour, milk, and baking powder into a batter.
- Pour into a pan, spoon the jam over, and bake at 180 C (350 F) for 25 minutes.
- Dust with powdered sugar to finish.
Tips
Do not overmix the batter once the flour goes in, or the pie can turn tough instead of soft. Spoon the jam in dollops rather than stirring it through, so you get pretty swirls in every slice. Let the pie cool slightly before slicing so the jam sets. It is lovely warm with a scoop of vanilla ice cream or a dollop of whipped cream.
