This high-protein cottage cheese bake is light, creamy, and gently sweet, with a golden top and a soft, custardy center. Made with fat-free cottage cheese, Greek yogurt, and eggs, it tastes like dessert but works just as well for breakfast — much like our Simple Baked Cheesecake. Serve it warm or chilled, plain or with berries, and enjoy a treat that is as satisfying as it is wholesome, just like our Baked Cottage Cheese Dessert with Orange Zest.

Ingredients
- 500 g fat-free cottage cheese
- 3 eggs
- 80 g Greek yogurt
- 1 packet vanilla
- Sweetener to taste
- 160 g rice flour
- 1 tsp baking powder
- Raisins or candied fruit (optional — changes the nutrition)
Instructions
- Blend the cottage cheese, eggs, yogurt, vanilla, and sweetener with an immersion blender until smooth.
- Fold in the flour and baking powder (add raisins or candied fruit here if using).
- Divide into molds.
- Bake at 180°C (350°F) for 45 minutes.
Tips
- Blend the cottage cheese until completely smooth — any lumps will show in the finished bake.
- Add raisins or candied fruit for sweetness and texture, but remember they change the nutrition values.
- Let the bake cool slightly before slicing so it sets cleanly. For more high-protein inspiration, see cottage cheese recipes on Allrecipes.
