This ice cream sandwich cake is the ultimate no-bake summer treat, with crisp cookies, creamy whipped ice cream and crunchy chocolate in every slice. Ingredients
- 6 shortbread cookies
- 150 ml (2/3 cup) heavy cream (33%)
- 50 ml (3.5 tbsp) sweetened condensed milk
- 50 g (2 oz) chocolate
Instructions
- Chop the chocolate into small cubes.
- Whip the cold cream until thick; keep whipping while adding the condensed milk. Beat a couple more minutes. Fold in the chocolate cubes.
- Line a pan with cookies, cover with the ice cream, top with more cookies.
- Freeze a couple of hours.
