This lazy Adjarian khachapuri delivers the famous Georgian cheese boat in a fraction of the time, using store-bought puff pastry. Molten suluguni and mozzarella, a runny egg yolk, and a brush of butter make pure breakfast bliss. Ingredients
- 250 g (9 oz) yeast-free puff pastry
- 120 g (4.2 oz) suluguni cheese, grated
- 100 g (3.5 oz) mozzarella, grated
- 3 eggs
- Butter for finishing
Instructions
- Shape the puff pastry into little boats and fill generously with the grated suluguni and mozzarella.
- Bake at 200 C (400 F) for 20-25 minutes.
- One minute before the end, crack an egg yolk into the center of each boat.
- Brush lightly with butter and serve immediately, while the yolk is still runny.
Tips
- Shape tall pastry walls so the cheese stays inside the boats while baking.
- Add the yolk just one minute before the end so it stays runny; usda.gov publishes helpful safe egg-cooking guidelines.
- Serve immediately – khachapuri waits for no one.
