Ingredients
- 1 egg
- 1 tsp salt
- 200 ml (3/4 cup + 1 tbsp) milk
- 160 g (1 1/3 cups) flour
- 1 tsp baking powder
- 300 g (10 oz) cheese, grated
Instructions
- In a bowl, beat the egg with the salt. Pour in the milk and keep beating; add the flour and baking powder, then the grated cheese, and mix everything together.
- Heat a well-oiled skillet, spread the batter evenly, and cover with a lid.
- Cook on low heat 10-12 minutes on one side, then flip carefully with a spatula (or using a plate) and cook 10 minutes on the other side.
Tips
- Keep the heat low so the center cooks through without browning too fast.
- A mix of cheeses gives the best melt and flavor; use whatever good melting cheese you have.
