Creamy cottage cheese, thick Greek yogurt and sweet mango blend into a cloud-soft treat that sets beautifully in the fridge. If you love airy cottage-cheese desserts, our chocolate cottage cheese soufflé with raspberry sauce is another delightful make-ahead option.

Ingredients
- Serves 2:
- 170 g soft cottage cheese (5%)
- 120 g thick Greek yogurt
- 35 ml milk (2.5%)
- 8 g gelatin
- 200 g mango, fresh or puree (berries work too)
- 15 g coconut flakes
- Sweetener to taste
Instructions
- Soak the gelatin in the milk for 5 minutes.
- If using fresh mango, peel and blend it smooth.
- Mix the cottage cheese, yogurt, mango, coconut flakes, and sweetener.
- Warm the bloomed gelatin in the microwave in 5-7 second bursts until liquid but not hot, and stir into the mixture.
- Mix well, divide into molds, and chill 1 hour (or freeze 20-30 minutes).
Tips
- Use ripe, sweet mango for the best flavor — frozen mango puree works too.
- Warm the gelatin gently in short bursts; overheating stops it from setting.
- Chill for the full hour for the lightest, mousse-like texture.
