Merchant-Style Buckwheat with Ground Meat

Recipe infographic: Merchant-Style Buckwheat with Ground Meat — ingredients and step-by-step visual guide

Merchant-style buckwheat is a beloved one-pot dish where nutty buckwheat groats simmer with seasoned ground meat and sweet vegetables. As the grains cook, they soak up all the savory juices and turn plump and deeply flavorful. It is hearty, budget-friendly comfort food — and if you enjoy cozy one-pot meals, my Hearty Chicken and Vegetable Stew is another family favorite.

Merchant-style buckwheat with ground meat and vegetables served in a skillet

Ingredients

  • 500 g (1.1 lb) ground meat (beef and pork mix)
  • 300 g (1.6 cups) buckwheat groats
  • 1 medium onion
  • 1 medium carrot
  • 2 tomatoes
  • 1.5 tbsp tomato paste
  • 1 garlic clove
  • 550–600 ml (2 1/3–2 1/2 cups) hot water
  • 1 tsp paprika
  • Salt and black pepper to taste
  • About 20 g (1.5 tbsp) butter
  • Vegetable oil for frying

Instructions

  1. Rinse the buckwheat well and drain it completely.
  2. Heat a little vegetable oil in a deep skillet.
  3. Add the ground meat and brown it well over high heat, breaking it into small pieces with a spatula.
  4. Add the finely chopped onion and fry for 2–3 more minutes.
  5. Add the grated carrot and cook for a few more minutes.
  6. Stir in the chopped tomatoes and tomato paste, and fry everything together for 2–3 minutes.
  7. Add the pressed garlic, paprika, salt and black pepper. Stir and warm for about 30 seconds so the spices release their aroma.
  8. Stir in the rinsed buckwheat and pour in the hot water. Bring to a boil, cover and simmer on low heat for 20–25 minutes, until the buckwheat is tender and has absorbed the liquid.
  9. Stir in the butter, fluff with a fork and serve hot.

Tips

  • Rinse the buckwheat thoroughly — it washes away dust and any bitterness for a cleaner, nuttier flavor.
  • Brown the meat over high heat so it sears rather than steams; those caramelized bits are pure flavor. Serious Eats has excellent guides on building flavor through proper browning.
  • Let the finished dish rest, covered, for 10 minutes so the grains steam through and fluff up nicely.
