Rich, chewy and naturally sweet, these no-bake nut and date truffles are dipped in dark chocolate and finished with crunchy nuts — a wholesome little treat that tastes like a celebration. They are perfect for healthy snacking or gifting, and they sit happily alongside other date-based sweets like sugar-free banana date chocolate candies and 3-ingredient pumpkin seed date candies. Keep a batch in the fridge for whenever a sweet craving strikes.

Ingredients
- 100 g (3.5 oz / about 3/4 cup) cashews
- 100 g (3.5 oz / about 2/3 cup) almonds
- 100 g (3.5 oz) Medjool dates, pitted weight
- 1/2 tsp cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp salt
- 1 tbsp coconut oil (optional, firms the truffles)
- 150 g (5 oz) dark chocolate for coating
- Almond petals and ground pistachios, to decorate
Instructions
- Blitz the nuts in a food processor to a coarse meal.
- Pour boiling water over the dates for a couple of minutes (don’t soak them long). Drain, pat dry on paper towels, and remove the pits. If your dates are very dry, use a few extra.
- Blend the nuts, dates, spices, salt, and optional coconut oil into a sticky dough.
- Shape into small patties (the author made 13 at 25-26 g / 0.9 oz each). Chill or freeze briefly to firm up.
- Melt the chocolate in a double boiler or microwave and dip each candy. Decorate with almond petals and crushed pistachio.
- Let set, then store in the fridge.
Tips
- Chill the shaped truffles well before dipping so the chocolate sets in a neat, even coat.
- If the dough is too sticky, chill it briefly or add a few more ground nuts.
