Ingredients
- 500 g (1.1 lb) crumbly cottage cheese
- 1 egg white
- 25 g (2 tbsp) sugar or sweetener to taste
- Pinch of salt
- 50 g (1/3 cup) rice or wheat flour (+ 15 g for shaping)
- 75 g (2.5 oz) chocolate, broken into pieces
Instructions
- Mix the cottage cheese with the egg white, sugar, salt and flour until uniform.
- Take a portion, form a ball, flatten, place a piece of chocolate inside, re-seal, dust with flour and shape into discs.
- Bake at 180°C (350°F) for 30 minutes, or pan-fry (with or without oil) over medium heat, covered, until golden on both sides.
Tips
- Use crumbly, well-drained cottage cheese so the dough is easy to shape.
- Seal the chocolate fully inside each disc to keep it from leaking during cooking.
- Cook covered over medium heat for an evenly golden, soft center. For more pancake ideas, browse Allrecipes.
