Soft, spiced pumpkin cookies studded with crunchy nuts and melted chocolate are the coziest kind of fall baking. Roasted pumpkin keeps every bite tender, while cinnamon and nutmeg give the batch its warm, bakery-style aroma.

Ingredients
- 180 g (3/4 cup) butter, softened
- 150 g (3/4 cup) sugar
- 250 g (1 cup) roasted pumpkin puree
- 1 egg
- 430 g (3 1/2 cups) all-purpose flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/3 tsp nutmeg
- 100 g (2/3 cup) chopped chocolate
- 100 g (3/4 cup) chopped nuts
Instructions
- Blend the roasted pumpkin, sugar, egg, and butter until smooth.
- Stir in the flour, salt, baking powder, cinnamon, and nutmeg.
- Fold in the nuts and chocolate. Cover and chill the dough 1 hour.
- Shape into cookies, place on a baking sheet, and bake at 180°C (350°F) for 20-25 minutes.
Tips
- Chill the dough for the full hour so the soft cookies hold their shape in the oven.
- Let the cookies cool on the tray for a few minutes before moving them, while the chocolate is still soft.
