These golden rice and zucchini patties are crisp outside, tender inside, and wonderfully light. Cooked rice, grated zucchini, and green onion come together with just a little flour for a simple, healthy bite. They pair beautifully with Zucchini Potato Flatbreads and Zucchini Fritters with Pickle-Yogurt Sauce and Trout for a fresh vegetable spread.

Ingredients
- 80 g (1/2 cup) dry rice
- 1 zucchini (180-200 g), grated
- 6-7 green onion stalks, chopped
- 2-3 tbsp flour
- Salt and pepper to taste
- Oil for frying
Instructions
- Cook the rice in salted water until done.
- Grate the zucchini and squeeze out the excess liquid.
- Mix in the green onion, cooked rice, salt, pepper, and flour.
- Shape into patties and pan-fry in a little oil on both sides until golden.
- Serve with fresh vegetables.
Tips
Squeeze the zucchini well so the patties stay crisp rather than soggy. Let the rice cool slightly before mixing so the patties hold their shape. For more healthy vegetable ideas, see Allrecipes.
