Golden on the outside, soft and cheesy inside, these savory cottage cheese pancakes are a high-protein breakfast worth waking up for. They come together in minutes from a handful of pantry staples and fry up beautifully crisp in a hot pan.

Ingredients
- 350 g (12 oz) cottage cheese
- 2 eggs
- 100 g (3.5 oz) hard cheese, grated
- 3 tbsp flour
- Salt to taste
- Oil for frying
Instructions
- Mix the cottage cheese, eggs, salt and grated cheese; stir in the flour. Turn the dough onto the counter, roll into a log, slice and shape into patties with a knife.
- Fry on both sides until golden.
Tips
- Drain very wet cottage cheese briefly so the patties hold their shape in the pan.
- Keep the heat at medium so the cheese melts inside without browning too fast outside.
- Serve warm with sour cream, fresh herbs or a simple salad for a complete breakfast.
