These savory cheese waffles are the breakfast upgrade you didn’t know you needed. Crisp and golden on the outside, tender and cheesy inside, they’re powered by protein-rich cottage cheese that keeps you full for hours. Mix the batter in five minutes and let the waffle iron do the rest — and if you love cheesy mornings, our Cheesy Cottage Cheese Lavash Rolls are another must-try.

Ingredients
- 100 g (3.5 oz) semi-hard cheese, grated
- 100 g (3/4 cup) all-purpose flour
- 100 g (3.5 oz) soft cottage cheese
- 40 ml (3 tbsp) milk
- 1 egg
- Salt and fresh herbs to taste
Instructions
- Toss the grated cheese with the flour.
- Add the egg, soft cottage cheese and milk, and mix thoroughly.
- Season with salt and chopped herbs, then mix once more.
- Spread the batter over a preheated waffle iron and bake for a few minutes until golden and crisp.
Tips
- Don’t overfill the waffle iron — the batter puffs up as the cheese melts, so a thin, even layer gives the crispiest result.
- Change the herb mix to change the mood: dill and chives for freshness, or a pinch of smoked paprika for warmth.
- Serve warm with sour cream or Greek yogurt. For a high-protein brunch spread, pair them with our Fluffy Cottage Cheese Casserole; for more waffle inspiration, browse the breakfast ideas at Allrecipes.
