This simple skillet khachapuri brings the cheesy joy of Georgia’s famous cheese bread to your stovetop — no yeast, no fuss. A quick batter loaded with grated cheese cooks up golden under a lid. Serve it alongside other easy mornings like Savory Zucchini Crepes or our Skillet Meat Pie with Crispy Lavash Crust.

Ingredients
- 1 egg
- 1 tsp salt
- 200 ml (3/4 cup + 1 tbsp) milk
- 160 g (1 1/3 cups) all-purpose flour
- 1 tsp baking powder
- 300 g (10.5 oz) hard cheese, grated
- Olive oil for the pan
Instructions
- In a bowl, whisk the egg with the salt. Gradually pour in the milk, whisking continuously. Add the flour and baking powder; mix until smooth.
- Fold in the grated cheese and stir again.
- Heat a skillet, brush with olive oil, and pour in the batter, spreading it evenly.
- Cover and cook on low heat about 10-12 minutes on one side, then carefully flip (a plate helps) and cook about 10 minutes more.
Tips
- Use a hard cheese that melts well, such as mozzarella or a suluguni-style cheese. Simply Recipes has a handy overview of cheeses that melt beautifully.
- Keep the heat low so the cheese melts through before the bottom over-browns.
- Flip with a plate over the skillet — it is much safer than a spatula for a flatbread this size.
