These vibrant green pancakes are the easiest way to sneak more greens into your morning. Blended spinach gives them a gorgeous color while a scoop of protein powder keeps you full for hours — much like our Fluffy Banana Kefir Pancakes, they are a breakfast that actually keeps you going. If you love a hearty morning stack, you will also enjoy our Oatmeal Apple Pancakes on slow weekends.

Ingredients
- 1 handful fresh spinach
- 100 g (1/2 cup) oat milk
- 1 egg
- 70 g (1/2 cup) flour (wheat or rice)
- Salt, to taste
- Herbs and dry garlic, to taste
- 1/3 tsp baking powder
- 1 serving protein powder
Instructions
- Blend the spinach and oat milk until smooth.
- In a bowl, combine the flour, salt, spices, protein powder, and baking powder.
- Pour in the spinach mixture, add the egg, and stir thoroughly.
- Spoon the batter onto a hot skillet with a drop of oil and fry on low heat under a lid, flipping once, until cooked through.
Tips
- Blend the spinach mixture until completely smooth so no leafy bits remain in the batter.
- Keep the heat low and cook under a lid — the middles need time to set without burning the bottoms.
- Serve with a dollop of Greek yogurt, and if you are on a green-breakfast streak, our Spinach Crepes with Tuna and Egg are a must. For more high-protein breakfast inspiration, browse Allrecipes.
