Sugar-Free Protein Marshmallows

Recipe infographic: Sugar-Free Protein Marshmallows — ingredients and step-by-step visual guide

Cloud-soft, bouncy and completely sugar-free, these protein marshmallows taste like a treat but pack 16 grams of protein per 100 grams. Whipped egg whites and gelatin do all the magic — no candy thermometer, no corn syrup, no guilt. They are perfect for snacking, gifting or floating on hot cocoa.

Fluffy homemade sugar-free protein marshmallows dusted and ready to serve

Ingredients

  • 4 egg whites
  • 30 g (1 oz) gelatin
  • 100 ml (1/3 cup + 1 tbsp) water
  • Stevia to taste
  • A pinch of citric acid
  • Vanilla extract or a pinch of vanillin

Instructions

  1. Whip the egg whites to stiff peaks with a pinch of citric acid and the vanilla.
  2. Soak the gelatin in the water and warm it until dissolved — never boil it or it will lose its gelling power. Stir the sweetener into the gelatin.
  3. Keep whipping the whites while slowly pouring in the gelatin.
  4. Pipe or spread the mixture into a mold or with a piping bag and refrigerate for several hours.
  5. Remove and dust with powdered sugar or grated chocolate (count their nutrition separately).

Tips

  • Make sure every bowl and whisk is spotlessly clean and grease-free — any fat will stop the whites from whipping. For more light, protein-packed desserts, try our Flourless Berry Protein Cheesecake.
  • Warm the gelatin gently and never let it boil; overheated gelatin will not set. Serious Eats explains the science of gelatin in desserts beautifully.
  • Pipe the mixture into silicone molds for neat, giftable cubes. Craving a single-serve treat instead? Our Microwave Mug Cheesecake is ready in minutes, and Lazy Cottage Cheese Cheesecake is another light favorite.
