Ingredients
- 400 g (14 oz) white fish fillet (cod, pollock, or haddock)
- 25 g (1.5 tbsp) butter, room temperature (or use only olive oil)
- 20 g (1.5 tbsp) olive oil
- 2 sprigs parsley, chopped
- 2 garlic cloves, minced
- 1/3 tsp paprika and 1/3 tsp curry powder
- Salt and pepper to taste
Instructions
- Grease a baking dish with oil; season with salt and pepper.
- Pat the fish dry and arrange in the dish.
- Mix both oils with the grated garlic, parsley, curry, and paprika.
- Spread the mixture over the fish.
- Bake at 190C (375F) for 15 minutes.
Tips
- Pat the fish very dry before baking so the butter mixture clings and the top browns.
- Do not overcook — the fish is done when it flakes easily with a fork, about 15 minutes.
- Swap the butter for olive oil only for a lighter dairy-free version.
