Ingredients
- For the buns: 180 g (6.3 oz) block cottage cheese (5% fat, not crumbly)
- 1 egg
- 80 g (4 tbsp) flour
- 1/2 tsp baking powder
- Pinch of salt
- 1 bunch green onions, chopped
- 1 yolk for brushing
- For the filling: cream cheese, lettuce, cucumber, lightly salted fish
Instructions
- Mix all bun ingredients; with wet hands, shape into buns on parchment and brush well with yolk.
- Bake at 180C (350F) on upper-lower heat for 30 minutes.
- Split and fill with cream cheese, lettuce, cucumber, and fish.
Tips
- Use block-style cottage cheese rather than a crumbly one — it gives the buns a soft, even crumb.
- Swap the fish for sliced turkey or chicken if you like; our Chopped Chicken Patties make a great high-protein filling.
