Healthy cottage cheese burger with cream cheese, cucumber and fish

Ingredients

  • For the buns: 180 g (6.3 oz) block cottage cheese (5% fat, not crumbly)
  • 1 egg
  • 80 g (4 tbsp) flour
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 bunch green onions, chopped
  • 1 yolk for brushing
  • For the filling: cream cheese, lettuce, cucumber, lightly salted fish

Instructions

  1. Mix all bun ingredients; with wet hands, shape into buns on parchment and brush well with yolk.
  2. Bake at 180C (350F) on upper-lower heat for 30 minutes.
  3. Split and fill with cream cheese, lettuce, cucumber, and fish.

Tips

  • Use block-style cottage cheese rather than a crumbly one — it gives the buns a soft, even crumb.
  • Swap the fish for sliced turkey or chicken if you like; our Chopped Chicken Patties make a great high-protein filling.
