Ingredients
- 200 g (7 oz) chicken breast fillet
- 25 g (about 1 tbsp) cream cheese
- 20 g (1 small) tomato, diced
- Parchment paper
- Favorite spices and salt to taste
- 100 ml (1/3 cup + 1 tbsp) water
Instructions
- Butterfly the chicken fillet to create a pocket.
- Wet a sheet of parchment with water, sprinkle with spices and salt, fold it like a book, and place the fillet inside.
- Sear the parchment parcel in a skillet over medium heat, 4-5 minutes per side.
- Pour the water under the parchment and braise 3-4 more minutes per side until cooked through.
- Open the parcel and fill the pocket with cream cheese and diced tomato.
Tips
- Don’t overcook — the chicken is done when the juices run clear and the meat is no longer pink inside.
- Try stuffing the pocket with different fillings, like the flavors in Chicken and Cheese Stuffed Egg Crepes.
