This crispy breakfast lavash roll turns simple eggs, ham and cheese into a café-worthy morning meal in just 15 minutes. If you love quick egg breakfasts like our savory egg patties with green onion or the Caprese omelet with mozzarella and pesto, this golden, melty roll will become a new favorite.

Ingredients
- 1 large lavash (thin flatbread)
- 2–3 eggs
- Sliced ham or sausage
- Ketchup or 1 fresh tomato, sliced
- Fresh herbs (dill, parsley)
- Hard cheese, grated
- Oil for the pan
Instructions
- Oil a skillet, crack in the eggs, and scramble as for an omelet. Lay the lavash sheet over the eggs, let them set, then carefully flip the lavash with the egg side up.
- On the egg side, spread ketchup (or tomato slices), ham pieces, torn herbs, and grated cheese.
- Roll the lavash up tightly and grill on a grill pan on both sides until golden and the cheese melts.
Tips
- Swap the ham for turkey, chicken sausage or mushrooms for a lighter version.
- Don’t overfill the lavash — a thin, even layer rolls tighter and crisps better.
- Serve immediately while the cheese is still melty. For egg safety basics, see the guidelines at usda.gov.
