Ingredients
- 600 g (1.3 lb) pork loin
- 3 onions
- 100 g (1/2 cup) mayonnaise
- 300 g (3 cups) hard cheese, grated
- Meat spices, cumin, salt, and pepper, to taste
Instructions
- Slice the pork no thicker than 1 cm (1/2 inch), pound both sides, and arrange on a greased baking sheet.
- Rub generously with the spices – be liberal with the cumin for maximum aroma.
- Slice the onions into thin rings (thick rings stay crunchy and less pleasant) and layer them over the pork.
- Pipe a lattice of mayonnaise over the top and sprinkle with the grated cheese.
- Bake at 180 C (350 F) for 50-60 minutes until the crust is golden brown.
Tips
- Slice the pork evenly and pound it to a uniform thickness so every piece cooks at the same rate – Serious Eats has a helpful guide to pounding meat for even cooking.
- Cut the onions into truly thin rings; thick ones stay crunchy and sharp instead of melting sweet. For more on building flavor with onions, browse the technique articles at Allrecipes.
- Watch the cheese in the last 10 minutes – you want deep golden, not burnt. For another cheesy pork bake, try our Cheese-Stuffed Meat Cutlets.
