Ingredients

  • 2 eggs
  • 2 bananas
  • 2 apples
  • 80 g (about 3/4 cup) oat flour (blended rolled oats)
  • 20 g (1 1/2 tbsp) coconut oil
  • 5 g (1 tsp) ground cinnamon
  • 30 g (1/4 cup) walnuts
  • 10 g (2 tsp) baking powder
  • Sugar substitute to taste

Instructions

  1. Mash the bananas with a fork. Whisk the eggs and add them to the bananas. Stir in the oat flour, cinnamon, sugar substitute, baking powder, and melted coconut oil until smooth.
  2. Fold in the sliced apples and chopped walnuts.
  3. Pour the batter into an ovenproof dish and bake in a preheated 180 C (350 F) oven for 40 minutes.

Tips

  • Use very ripe bananas with brown spots — they are naturally sweeter, so you can cut back on the sugar substitute. The baking guides at Serious Eats explain why ripe fruit makes better bakes.
  • Slice the apples thin so they soften fully into the batter; thick chunks stay crunchy in the middle of the cake.
  • Let the cake cool for at least 15 minutes before slicing — the oat crumb sets as it cools. If banana desserts are your thing, you’ll also love our Chocolate Banana Cheesecake.
