Ingredients
- 2 eggs
- 2 bananas
- 2 apples
- 80 g (about 3/4 cup) oat flour (blended rolled oats)
- 20 g (1 1/2 tbsp) coconut oil
- 5 g (1 tsp) ground cinnamon
- 30 g (1/4 cup) walnuts
- 10 g (2 tsp) baking powder
- Sugar substitute to taste
Instructions
- Mash the bananas with a fork. Whisk the eggs and add them to the bananas. Stir in the oat flour, cinnamon, sugar substitute, baking powder, and melted coconut oil until smooth.
- Fold in the sliced apples and chopped walnuts.
- Pour the batter into an ovenproof dish and bake in a preheated 180 C (350 F) oven for 40 minutes.
Tips
- Use very ripe bananas with brown spots — they are naturally sweeter, so you can cut back on the sugar substitute. The baking guides at Serious Eats explain why ripe fruit makes better bakes.
- Slice the apples thin so they soften fully into the batter; thick chunks stay crunchy in the middle of the cake.
- Let the cake cool for at least 15 minutes before slicing — the oat crumb sets as it cools. If banana desserts are your thing, you’ll also love our Chocolate Banana Cheesecake.
