These healthy apple waffles taste like a treat but eat like a wholesome breakfast. Grated apples melt right into a kefir-based batter with rice and whole-wheat flour, so every waffle comes out fluffy, lightly sweet and golden. They are a natural next bake after our apple cinnamon waffles and fluffy kefir pancakes — and apple lovers should also try the quick apple tortilla pie. Apples add natural sweetness and fiber (the USDA database is a handy reference for fruit nutrition), and Serious Eats has great waffle technique tips.

Ingredients
- 2 large apples (or 4 small), grated
- 2 eggs
- 360 ml (1 1/2 cups) kefir
- 3 tbsp rice flour
- 6 tbsp whole-wheat flour
- 2 tbsp maple syrup (honey or sugar also work)
- a pinch of salt
- 1/2 tsp vanilla extract
Instructions
- In a bowl, whisk the eggs, kefir, maple syrup, vanilla extract and salt.
- Stir in the rice flour and whole-wheat flour and mix until smooth.
- Fold the grated apples into the batter.
- Spoon 2-4 tablespoons of batter into a greased waffle iron and cook until golden brown.
- Serve with melted chocolate, fresh berries and a dusting of powdered sugar.
Tips
- Grate the apples coarsely and fold them in last so the batter stays light.
- Grease the waffle iron well between batches — the apple sugars love to stick.
- Swap maple syrup for honey or sugar without changing anything else.
