These chocolate-filled cottage cheese pancakes, known as syrniki, are crisp and golden on the outside with a warm, molten chocolate center. Made with dry small-curd cottage cheese, they are light, protein-packed and ready in minutes — serve them for breakfast or dessert, much like our Chocolate-Coated Cottage Cheese Pancakes or Classic Syrniki (Cottage Cheese Pancakes).

Ingredients
- 400 g (14 oz) cottage cheese (dry, small-curd)
- 1 egg
- 2-3 tbsp flour (plus extra for dusting)
- 1-2 tbsp sugar
- 50 g (1.8 oz) chocolate, broken into squares
Instructions
- Mix the cottage cheese, egg, sugar and flour into a soft, workable dough.
- Form small balls, tuck a piece of chocolate into the center of each and seal. Dust lightly with flour.
- Heat a skillet with a drop of oil over low heat.
- Fry the pancakes on both sides until golden brown. Serve warm, while the chocolate center is still molten.
Tips
- Use dry, small-curd cottage cheese so the dough holds its shape without extra flour.
- Seal the chocolate well inside each ball so it melts into a gooey center instead of leaking out.
