Fresh summer salad with golden croutons, tomatoes, cucumber and olives in a serving bowl

Ingredients

  • 250-300 g (9 to 10 1/2 oz) tomatoes
  • 1 small cucumber
  • 1/4 red onion
  • 2-3 slices bread, baguette or ciabatta
  • 1 garlic clove
  • Olives to taste
  • Olive oil
  • Salt and freshly ground black pepper
  • For the dressing:
  • 2 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 garlic clove
  • 1-2 tbsp lemon juice
  • Salt and black pepper

Instructions

  1. For the dressing, whisk all dressing ingredients together.
  2. Cut the bread into small cubes, toss with salt, black pepper and a little olive oil, and bake in a preheated oven at 190 C (375 F) for 10-12 minutes until golden and crisp.
  3. Cut the tomatoes into chunks (halve cherry tomatoes), slice the cucumber and cut the onion into thin half-rings. Combine in a mixing bowl.
  4. Add olives, grated garlic, the dressing and the croutons to taste. Fresh basil works well too. Toss and serve.

Tips

  • Bake the croutons until deeply golden — they stay crisp longer once dressed.
  • Add the dressing just before serving so the vegetables stay fresh and the croutons stay crunchy — find more salad inspiration at Allrecipes.
  • Toss in fresh basil or feta for extra flavor, or pair it with our seared tuna salad with grilled zucchini and avocado for a bigger meal.
