Ingredients
- 1 whole chicken, 1.5 kg (3.3 lb)
- 1 tsp salt
- Vegetable oil for frying
- 1 head garlic
- 500 ml (2 cups) cream 20%
- 1 tsp paprika
- Chili pepper to taste
- Fresh parsley and dill
Instructions
- Cut the chicken into large pieces, salt them, fry in vegetable oil until golden and remove from the pan.
- Grate the garlic on a fine grater (or use a garlic press) and saute briefly in the same pan.
- Add the cream, paprika and chili, adding more salt if needed. Bring to a boil, stir in some herbs and return the chicken to the pan.
- Braise under a lid on low heat for 20-30 minutes until the chicken is cooked through.
Tips
- Brown the chicken well before adding the cream — that golden crust adds deep flavor to the sauce.
- Keep the heat low once the cream goes in so the sauce stays silky — you will find more sauce techniques at Serious Eats.
- Serve over mashed potatoes, rice or crusty bread to soak up every drop — or try our chicken and cheese stuffed peppers for another easy dinner.
