Ingredients
- 250-300 g (9 to 10 1/2 oz) tomatoes
- 1 small cucumber
- 1/4 red onion
- 2-3 slices bread, baguette or ciabatta
- 1 garlic clove
- Olives to taste
- Olive oil
- Salt and freshly ground black pepper
- For the dressing:
- 2 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 garlic clove
- 1-2 tbsp lemon juice
- Salt and black pepper
Instructions
- For the dressing, whisk all dressing ingredients together.
- Cut the bread into small cubes, toss with salt, black pepper and a little olive oil, and bake in a preheated oven at 190 C (375 F) for 10-12 minutes until golden and crisp.
- Cut the tomatoes into chunks (halve cherry tomatoes), slice the cucumber and cut the onion into thin half-rings. Combine in a mixing bowl.
- Add olives, grated garlic, the dressing and the croutons to taste. Fresh basil works well too. Toss and serve.
Tips
- Bake the croutons until deeply golden — they stay crisp longer once dressed.
- Add the dressing just before serving so the vegetables stay fresh and the croutons stay crunchy — find more salad inspiration at Allrecipes.
- Toss in fresh basil or feta for extra flavor, or pair it with our seared tuna salad with grilled zucchini and avocado for a bigger meal.
