Ingredients
- 50 g (1 large sheet) lavash flatbread
- 80 g (2.8 oz) cottage cheese (5% fat)
- 1 egg, separated
- 30 g (1 oz) light cheese (any hard cheese)
- Fresh herbs and salt to taste
Instructions
- Cut the lavash into two long strips.
- Mix the cottage cheese with the egg white, grated cheese, chopped herbs and salt.
- Place the filling on one end of each strip and fold into triangles.
- Brush with the egg yolk and bake in a preheated 200°C (390°F) oven for 10-15 minutes until golden and crisp.
Tips
- Keep the lavash covered with a damp towel while you work so it does not dry out and crack.
- Do not overfill the triangles — a thin, even layer of filling crisps up best.
- Serve with Greek yogurt or a simple tomato salsa for dipping. For more flatbread ideas, Serious Eats has great technique guides.
