Crispy golden lavash triangles with savory cottage cheese and herb filling

Ingredients

  • 50 g (1 large sheet) lavash flatbread
  • 80 g (2.8 oz) cottage cheese (5% fat)
  • 1 egg, separated
  • 30 g (1 oz) light cheese (any hard cheese)
  • Fresh herbs and salt to taste

Instructions

  1. Cut the lavash into two long strips.
  2. Mix the cottage cheese with the egg white, grated cheese, chopped herbs and salt.
  3. Place the filling on one end of each strip and fold into triangles.
  4. Brush with the egg yolk and bake in a preheated 200°C (390°F) oven for 10-15 minutes until golden and crisp.

Tips

  • Keep the lavash covered with a damp towel while you work so it does not dry out and crack.
  • Do not overfill the triangles — a thin, even layer of filling crisps up best.
  • Serve with Greek yogurt or a simple tomato salsa for dipping. For more flatbread ideas, Serious Eats has great technique guides.
