This 10-minute oat cake is the answer to busy mornings and sudden sweet cravings. A tender oat pancake layers up with sliced banana and sweet cottage cheese cream, finished with a dusting of cocoa. Ingredients
For the cake layer:
- 50 g (about 1/2 cup) oat flour
- 1 egg
- 50 ml (about 3 tbsp) milk (2.5% fat)
- 20 g (1 tbsp) cottage cheese (5% fat)
- 1 g (about 1/4 tsp) baking powder
For the cream:
- 150 g (5.3 oz) soft cottage cheese (up to 5% fat)
- Sweetener to taste
- 1 banana, sliced
- Grated cocoa for dusting
- Berries or fruit for decorating (optional)
Instructions
- Whisk all the cake-layer ingredients together and cook like a thick pancake in a non-stick pan, browning both sides.
- Slice the banana into rounds. Mix the soft cottage cheese with sweetener until smooth.
- Cool the cake layer and cut it into 4 pieces.
- Assemble: layer cake piece, cream, banana slices, and repeat, finishing with cream.
- Dust with grated cocoa and decorate with berries or fruit if desired. Serve right away or chill briefly.
Tips
- Keep the heat medium-low so the thick oat pancake cooks through without burning.
- Chill the assembled cake for 15–20 minutes if you like cleaner slices.
- Top with berries like in our Baked Cottage Cheese Casserole with Berries, and explore more quick breakfast ideas at Allrecipes.
