Ingredients
- 5-6 calamari tubes
- 400 g (14 oz) fresh mushrooms
- 200 ml (3/4 cup) heavy cream (33%)
- 50 g (3.5 tbsp) butter
- 30 g fresh parsley
- Salt and pepper, to taste
Instructions
- Clean the calamari. Saute the mushrooms until golden and use as stuffing.
- Stuff the calamari tubes.
- Sear the stuffed calamari in butter on both sides until browned, 2-3 minutes per side.
- Transfer to a paper towel and rest 2-3 minutes before serving.
Tips
- Do not overcook the calamari — a quick sear keeps it tender, not rubbery.
- Season the mushroom stuffing well and let it cool slightly so it is easy to spoon in.
