Seared calamari stuffed with mushrooms, garnished with fresh parsley

Ingredients

  • 5-6 calamari tubes
  • 400 g (14 oz) fresh mushrooms
  • 200 ml (3/4 cup) heavy cream (33%)
  • 50 g (3.5 tbsp) butter
  • 30 g fresh parsley
  • Salt and pepper, to taste

Instructions

  1. Clean the calamari. Saute the mushrooms until golden and use as stuffing.
  2. Stuff the calamari tubes.
  3. Sear the stuffed calamari in butter on both sides until browned, 2-3 minutes per side.
  4. Transfer to a paper towel and rest 2-3 minutes before serving.

Tips

  • Do not overcook the calamari — a quick sear keeps it tender, not rubbery.
  • Season the mushroom stuffing well and let it cool slightly so it is easy to spoon in.
