Sliced banana roll cake with cream cheese filling, bananas and berries

Ingredients

  • 2 bananas
  • 3 eggs
  • 200 g (3/4 cup) cream cheese
  • 50 g (1/4 cup) sugar
  • 50 g (3 tbsp) sour cream (20%)
  • Berries (black currant works well)
  • 70 g (1/4 cup) condensed milk

Instructions

  1. Beat the eggs with the sugar into a light sponge batter (you may add 70 g flour to the base before whipping if you like).
  2. Spread thin on greased parchment and bake until just set – handle the delicate sponge carefully.
  3. Cool the sponge completely, or the roll may crack.
  4. Spread with cream cheese mixed with sour cream and condensed milk; add sliced bananas and berries.
  5. Roll up, wrap in plastic, and chill at least 1 hour to set.

Tips

  • Roll the sponge while it is still slightly warm if it resists, then unroll to fill once cool.
  • Chill the finished roll well before slicing for neat, clean rounds.
