Hot chicken sandwiches with melted cheese and BBQ sauce on toasted bread

Ingredients

  • 150 g (5 oz) chicken breast
  • Toast bread
  • Sliced cheese
  • 100 g (3.5 oz) hard cheese, grated
  • 1 tomato
  • 1/2 red onion
  • 2 pickled cucumbers

For the sauce:

  • 2 tbsp BBQ sauce
  • 2 tbsp mayonnaise
  • 1 tsp grainy mustard
  • Salt, paprika, chicken spices, to taste

Instructions

  1. Dice the chicken small and fry with the spices until done.
  2. For the sauce, finely chop the onion and cucumbers; add the BBQ sauce, mayonnaise, and mustard; mix well.
  3. On each bread slice layer: sliced cheese, tomato rings, chicken, sauce, then grated cheese on top.
  4. Bake at 200C (400F) for 15 minutes until the bread is crisp and the cheese stretches.

Tips

  • Cut the chicken evenly so it cooks through quickly without drying out.
  • Do not overload the bread, or the sandwiches will turn soggy instead of crisp.
